ALOUETTE'S FALAFEL
1 c. dried chickpeas, soaked overnight
1 medium onion
3 garlic cloves
1 jalapeno pepper
1 tsp. salt
1 tsp. ground cumin
1 tsp. ground coriander
1/2 tsp. black pepper
1/2 tsp. baking powder
1 Tbsp. fresh chopped parsley
1 Tbsp. fresh chopped cilantro
4 Tbsp. bread crumbs
4 Tbsp. water
Vegetable oil for frying
Grind chickpeas, garlic, onion and jalapeno in food processor. Mix in bowl with remaining ingredients. Refrigerate for 1 hour.
Heat the oil in a wide saucepan or wok. Drop falafel balls by the teaspoon-full into boiling oil, fry until brown. You can add a jalapeno to the fry oil.
Serve in pita with hummus, tehina, tomato & cucumber, harissa.
