Because it means that it is no longer special.
It is like good coffee. Now that everyone and his brother can make gourmet quality coffee the anointed ones have moved on to tea.

I have been blessed with a farmer's market, a health food store and a mega-mart in easy shopping distance. There are only a few things I buy at the HFS, a lot of the exact same processed organic foods are carried at the mega mart for about 20% less and the produce at the farmer's market is fresher because of high turn over.
But the farmers market and the megamart aren't trendy.
But farmer's markets and megastores can be great, too. It counts what you are buying and why.
There is such a thing as quality. Quality you usually pay more for, because it's worth it. But then there is elite appeal, like $200 tshirts.
I buy quality coffee cause I like it. But I will shop around to make sure it's quality, and not just snob appeal I am buying.
My local health food store sells some things at prices comparative to the local stores. Because of demand, I can buy cage free eggs at my grocery at a price I feel is tolerable.
Why should the rich and/or trendy be the only ones to benefit? Good stuff is good stuff. I'm glad to see it become more abundant.
Here in Northern California the Farmers Markets are *VERY* trendy; I guess the yuppies are willing to slog shoulder to shoulder with the working class when the payoff is really really fresh food at excellent prices and knowing you're supporting the farmers who are still an important part of the community.
