I have a cousin who claims that Amberjack are delicious, but most folks don't like them. Larger amberjacks (such as the one in the photo, which weighed about 50 pounds) often get large parasitic worms in their flesh. The one in the photo was returned to the sea after the picture was taken.

Members of the jack family vary in their table quality. Jack crevalles and horse-eye jacks are inedible. Pompano, at the other end of the scale, are gourmet fare. Blue runners and Pacific yellowtail are also quite good, and are often found on the menu in sushi restaurants. I'm particularly fond of yellowtail.

My Dad would take us fishing in Fort Lauderdale for Yellow Jack and Pompano. We caught them with squid, off he Dania Pier. What did you use?
