Actually I've never had pineapple pie...hate to say these I've NEVER IN MY LIFE BAKED A PIE. Love to cook but have never really "done desserts" (to dad and Mr. D's dismay :o) You could post the recipe and I could try (hint hint) as I do love pineapple!

Actually working outside installing 205 feet of gutter. Rainy and 36 right now supposed to turn to snow and 28 tomorrow.

Get you mind outta the gutter... sorry, couldn't resist.

Our storms have stopped and the grass dried out enough for Christian to mow Poppy's lawn today.

You could post the recipe and I could try (hint hint) as I do love pineapple!

Pineapple Pie (Two crust)

1 recipe pastry for a 9 inch double crust pie
3/4 cup white sugar
3 tablespoons cornstarch
1 (20 ounce) can crushed pineapple with juice
1 tablespoon lemon juice
2 tablespoons milk
1 tablespoon white sugar

Preheat oven to 425 degrees F. In a meduim saucepan combine sugar, cornstarch, pineapple with juice, and lemon juice. Cook over meduim heat, stirring constantly until thickened, then allow to boil 1 minute. Cool slightly and pour mixture into pastry-lined pie pan. Cover with top crust and seal around edges. Make a few steam vents in crust, then brush with milk and sprinkle with sugar. Place in preheated oven and bake for 35 minutes, or until crust is golden brown. Serve chilled, or at room temperature (I prefer room temperature). Store pie in the refrigerator. This pie is good ala mode.

It couldn't be easier.....(and, don't tell anyone, but sometimes I use those pre-made pie crusts in the freezer section of the grocery store....they are good and they make it REALLY quick and easy!).
