Every new year we have this * traditional * Cajun feast.
Seafood casserole:
Ingredients: Milk, Butter, Flour, Celery, Onions, garlic , seafood.
In a big cooking pot, cook 3 cups of Celery, 2 Cups Onions, 3 table spoons of Butter, 1/2 clove of Garlic to a crisp. Add salt and pepper to taste.
Sauce: Now add 3 1/2 cups of Milk, 3/4 cup of Butter, 1 cup of Flour...mix together thoroughly on medium heat till there are no lumps, then ADD 1lb Velvetta Cheese...stir frequently till melted...DO NOT BRING TO BOIL...low to medium heat.
Now you add the Seafood.
1 lb Lobster
1 lb Scallops
1 lb medium sized shrimp
1 lb Quahogs ( or use clams )
1 1/2 lb of Crab meat
stir frequently on low heat...let simmer for a good 30minutes so seafood juices flow out...
This dish is best served reheated the day after, to be quite honest.
We have this and traditional Ham, potatoes, carrots, green beans and usually a coconut cream pie.
:D ENJOY!

Only a 1/2 clove garlic? Hardly seems worth the trouble. What happens if you use more?

That sounds good. Hubby says we have to try that one. :)
Now, if I can just find a good recipe for Squirrel Mulligan! A nephew got a couple squirrel dogs for Christmas. LOL.

Your Seafood Casserole sounds scrumptious! If I can put Velveeta on lobster, I will have died and gone to heaven. I think I have to make this tomorrow! Thank you.
