Yeah, this "don't say Christmas, say Happy Holidays" nonsense has gotten out of control. From stockings to store advertisements to the White House's "Holiday" cards. It is everywhere!
"Happy holidays" is nothing new. Does anyone remember the song, "Happy Holidays" sung by the likes of Andy Williams and Steve and Edie? That has to go back at least 40 or 50 years. Christmas cards and signs saying "Season's Greetings" also go back a long way. So if we can ask "What holidays?" we can also ask "What season?" I don't know for sure, but I have strong doubts that there was any kind of PC consideration involved when that song was written or those cards and signs were originated. And the fact that we celebrate Christmas and the New Year pretty much together pretty much accounts for such "generic" greetings.
So I don't think that every instance of "Happy Holidays" is a way to avoid the use of Christmas or to "make war" on it or create some kind of Christmas/Hannukah/Kwanzaa/Whatever syncretism.

There is nothing wrong with it per se. I always felt it referred to Christmas and Hanukah, and as another person pointed out on another thread to me when I made the same point as you that there is nothing inherently wrong with "Happy holidays" that it also refers to New Year.
In context, though, Happy Holidays can be absurd and only used to overtly avoid saying Christmas. Holiday tree is an example. This stocking would be as well. There are no holiday trees or holiday stockings.
Exactly. Those would be examples in which the symbols are being stripped of their traditional association with Christmas.
I am very excited about this years holiday dreidels and holiday menorahs.

I also am excited about the holiday feats of strength.
I'm getting confused. And it doesn't help that I'm Eastern Orthodox on the Julian calendar and we celebrate the C-Day on January 7! Or, maybe I just just take advantage of that and forget about everything else.
I'm acting as if we can't say the name of any specific holiday and have to refer to everything by the generic "holiday" moniker.
