The key to good tasting venison is to make sure you remove the tallow (fat) and the membranes encasing the muscle. That is where the gamey taste comes from. Also, don't cook it to death, like you would do with pork. You need to add a friendly tasting fat, like bacon or beef for moisture. Venison really takes a marinade though. Slice it thin, marinade in terriaki sauce and stir fry!

My favorite way to eat venison is in stew. It goes well with all the other flavors.

The meat I don't grind, I make into steaks and stew meat. The steaks need something to spice them up, I don't care for them just plain.

Ground up with beef fat and in stew meat is how I like it best.
