ON A DIET but still want your pumpkin pie?

Usually, I follow a standard pumpkin pie recipe either
out of my old Betty Crocker cookbook or the one listed
on the can of the Libby's canned Pumpkin.

HOWEVER,

I have always substituted low-fat or non fat milk
for the condensed milk and added a little extra
sugar substitute and extra pie spices, substituted
egg substitute for real eggs and sugar substitute
(usually Splenda) in place of sugar.

One year I was out of milk all together. I just had
lite egg nog in the refrigerator. I used that and oh
does that taste good.

Cindy that was a great diet pumpkin pie recipe.. This proves the old adage, if there is a will there is a way.. :)
