I suspect that their eating habits have been a little exaggerated. Most of the sources that say the Caribs were cannibals also say the Arawaks were pacifists, however the Caribs did not occupy most of the Lesser Antilles until after the Arawaks were decimated (mostly by disease).
Jared Diamond in his book "Guns, Germs, and Steel" says that one of the things that Montezuma did to offend the Spaniards was to offer them the flesh of the sacrificed victims. The Aztecs had one of the most bloody religions I know of, and they had to do something with all of those corpses.
