I used to cook in a Cajun restaurant for a living!
Best compliment I ever got, was when a customer asked me to come and see him..
I took off me apron and went out to meet him..
he was a trucker form New Orleans..
He said he hadn't eaten so good in a long time...
He asked me how come a gal from Maine could cook like that..
My folks are Acadian..
Dat's why!
Recipes were so very similar, I just had to learn the "hot" part!
