Try this sweet recipe...

My butt just increased by 2"s just reading that recipe!! =8-p

My suumer favorite

Grab a few really ripe, juicy tomatoes - beefsteak if you can get them. Slice them up and lay them out on a plate. Lightly salt each slice. Cover w/ a freah leaf of basil and a thin sllice of a nice, young mozzarella. Drizzle w/ a good olive oil and some balsamic vinegar. Let sit for a few minutes. Serve w/ a nice cool glass of pinot gregio and a good, crusty bread to soak up the jiuce

Heaven in earth!!

Hey Kitty, that's caprese, one of my favorites all summer long, too, even down to the Pinot Grigio. Sometimes I like some white asparagus on the side to dandy it up a little.

I do something similiar only I use Feta cheese instead of mozzarella. Also try adding a thin slice of red onion to that...

I also add a clove of finely minced garlic. Helps keep the mosquitoes away.

And on alternate days, roast some big, firm, home grown red bell peppers, peel, chill, sprinkle with capers, balsamic vinegar and olive oil. Though you could take some of that good crusty bread and crumble it with cukes, tomatoes, black olives, sweet onion and add a dash of olive oil and of balsamic vinegar.
