Cheeselets

These crispy cheese biscuits are irresistible, and will disappear in moments. Try using different cheeses sprinkled with a variety of seeds to give alternative flavors. Makes about 80.

115g/4 oz/1 Cup Plain Flour
1/2 Teaspoon Salt
1/2 Teaspoon Cayenne Pepper
1/2 Teaspoon Dry Mustard
115g/4 oz/ 1/2 Cup Butter
50g/4 oz/ 1/2 Cup Cheddar Cheese, Grated
50g/4 oz/ 1/2 Cup Gruyere Cheese, Grated
1 Egg White, Beaten
15g/1 Tablespoon Sesame Seeds

Preheat over to 220ºC/425ºF/Gas 7. Line several baking sheets with non-stick baking paper. Sift the flour, salt, cayenne pepper, and mustard into a mixing bowl. Cut the butter into pieces and rub into the flour mixture until it begins to cling together.

Divide the mixture in half, add the Cheddar to one half and the Gruyere to the other. Using a fork, work each mixture into a soft dough and knead on a floured surface until smooth.

Roll out both pieces of dough very thinly and cut into 2.5cm/1" squares. Transfer to the lined baking sheets. Brush the squares with beaten egg white, sprinkle with sesame seeds and bake in the over for 5-6 minutes or until slightly puffed up and pale golden in color. Cool on baking sheets, then carefully remove with a palette knife. Repeat the process until you have used up all the biscuit dough. Pack into tins or boxes and tie with ribbon.
