I believe you are wrong there... FIANCEE is not a legal term. It applies to a person you have asked to marry you, and that person has answered YES.

Michael's family in Pennsylvania wrote up an obituary in 1997,
in a Pennsylvania paper, and in that, they wrote ....survived by... Michael Schiavo and his fiancee Jodi Centonze.

Michael also testified under oath on the witness stand, I
believe in 2000, or maybe it was 2002 that Jodi is his fiancee.

I don't know about legalities, not being a lawyer, but I do know that it is impossible to be engaged to someone while you are married to someone. That is not an engagement. It's a potential engagement and perhaps becomes a real engagement once you are divorced, but not until.
