I've heard that repeated by the pundits, but with the final score of 32-29 I don't see how that would have changed the outcome.

Here's how. If Carolina kicks it the score is 21-17 Pats. Carolina scores again and it would have been 24-21 Cats. Pats score again to make it 28-24. Cats last touchdown would have made it 31-28 which means Vinatieri's field goal ties the game.
