It's a polite way of invoking the Almighty.
I don't know the origins, but it may have had it's outgrowth from
the (AFAIK) the Jewish name for the Almighty which was without vowels.
I'm no expert on this...and hope more the more knowledgeable will help out...

It comes from "Jewish sensitivies" and not naming the "name of God" -- therefore saying "G-d". It's sort of like how people write swear words here (without "actually" swearing, you see...). Although, I'm not equating the name of God with swear words (mind you).
