Can't they avoid that scenario by simply picking another elector?
I am sure it is far too late for that.

What makes you so sure? Haven't there been any cases where an elector dropped dead in the month between the popular vote and the electoral vote?

Agreed. Electors aren't listed by name on the ballot. It ought to be easy enough to provide for replacements before election day, especially since the electors don't have to show up and vote for President until December.
