Moose Stew

3 lbs. Moose Roast, cut in 1" pieces
1/2 lb of thick bacon, 1/2" chunks
¼ lb butter
4 cups water
1 bottle of cheap red wine
2 onions
1 clove garlic
1/2 can of tomato past
1 tsp thyme
salt and pepper to taste

Brown moose meat and bacon in hot butter with chopped onion, add water, red wine, salt and pepper.
Let simmer, adding garlic, thyme, and tomato paste after about an hour of cooking. Cook for another hour. Then cut up and add:


2 carrots
2 parsnips
1 small turnip
10 potatoes


Cook for 30 minutes or until vegetables are tender.
Make dumplings if you wish.
