Biblically speaking he was the second Adam -- all modern day humans are descended from Noah alone. So, that means that Noah would have been a composite Negroid-Mongoloid-Caucasoid, sort of a dark skinned person with almond shaped blue eyes and red hair! He was not of any one race.
