Demotic (popular) is a term for a late form of cursive writing used from the 15th Dynasty on (c. 1674-1567 B.C.), also called Enchorial (native)...it is a simplified version of Hieratic. The names are of Greek origin.

The word "demotic" is also used in other senses, as for the more popular form of modern Greek (as opposed to katharevousa, the "purified" or more old-fashioned form of the modern language).

Right, the Behistun inscription engraved on behalf of King Darius I of Persia has three kinds of writing--Old Persian, Babylonian, and Elamite, all in cuneiform...a more difficult task to decipher since none of the three versions was known (unlike the Rosetta Stone where the Greek text could be read immediately).

All of the Hebrew Scriptures, including the Torah, are written in Hebrew, except for portions of the book of Daniel which are in Aramaic.

The Hebrew Scriptures are the same books as the Protestant canon of the Old Testament.

Catholics and Eastern Orthodox Christians also include in the Old Testament some additional books which are preserved in Greek only (although in at least one case the book was originally written in Hebrew, namely Sirach or Ecclesiasticus). There are also some additions to Daniel which are in Greek only, including the story of Susannah and the elders.
