My question is how many are truely unemployed? Unemployment rates don't include students or unemployed people that have given up searching for a job.

That's right. Unemployment rate is number of unemployeed workers divided by total workforce. Those who are not in the workforce (either because they are full-time students or because they have dropped out of the workforce and are no longer seeking employment) do not count as unemployeed workers. Your question seems to imply that you would count these people among the unemployed.

Yes, with a break down showing % of unemployed are students, % of unemployed are not actively looking for jobs and % of unemployed are retired. Sure the unemployment rate may be higher, but then you could say that x% of unemployed are looking for jobs, x% are students without jobs, x% are retired, x% are not looking for jobs.

Also, in the employed figures I would include self employed. Then you could show % of employed are self employed. I would bet that that number alone would really embolden people to do the same. I would also show % of employed are students for those of use that work full time and go to school full time.
