Peppers, peppers and more peppers Short of having that pocket guide to peppers, a simple rule of thumb is the smaller the pepper, the hotter it is. Reds are also usually hotter than greens of the same variety.

Beer-Basted Sausage with Caramelized Onions and German Mustard
The title takes almost as long to read as it takes to eat it!!! Hahahahahaah
- 8 sausages, such as bratwurst, knackwurst or wieners
- 4 oz. any stout beer, your favorite brewski will work as well.. LOL
- 2 oz. hot horseradish deli mustard
- 3 oz. vegetable oil
- 16 oz. yellow onion, peeled, quartered and sliced very thin
1) Place vegetable oil in a large nonstick skillet and add the sliced onions. Sauté over low heat, stirring often, until onions are golden brown, soft and caramelized. Do not let burn.
2) Season to taste with salt and pepper, and stir in the hot mustard. Set aside.
3) Prepare a grill, and cook sausages, basting with the beer every minute or so.
Serve the sausages with the mustard-seasoned onions.
(Note: you may prefer the traditional sauerkraut, which is delicious when heated with whole brown mustard seeds)

LowCarb Cream of Watercress Soup
- 2 bunches chopped watercress
- 1 large chopped onion
- 1 chopped leek
- 2 cups chopped cauliflower
- 6 cups chicken stock
- 1 cup heavy cream
- 2 Tbsp. butter
- Salt and pepper to taste
1) Sauté the onion and leek in butter in a large saucepan for 3 minutes.
2) Add watercress, cauliflower, and stock to the saucepan. Bring to a boil and simmer for 45 minutes.
3) Blend in food processor then return to the saucepan. Season with salt and pepper.
4) Add the cream and cook for another 3 minutes.

Our local Food Pavilion Store is making a 3g net digestable loaf for $2.99. So far I find their bread better than others I have tried.The unit cost for the homemade version of this bread, and it's about .92, and can become even less with the bulk purchase of the ingredients.. IE: 25 lb. speciality flours are about 40% less than a 4# bag.. You store is selling a low carb bread at a fair price.. :)

Actually the Adkins craze is pumping up a whole new industry in meat and eggs again.. and will spur a host of new small businesses that are flexible enough to jump onto the innovations in bread, desserts, pastas, prepackaging meals, snacks, and.. sigh..cookbooks.. :)

Hey there my dear FRiend.. here is a great meal to try.. :)
LowCarb Newfoundland Style Pork Chop Casserole
- 4 thick pork chops
- 3 Tbs.. butter
- 4 large apples, sliced
- 2 tablespoons lemon juice
- 1/4 lb. fresh cranberries, or a 1/2 can of whole cranberries
- Sprigs of rosemary
- 5 sprigs of parsley
- 2 Tbs.. melted butter
- Salt and pepper
1) Trim most fat from the chops and season with salt and pepper.
2) Brown gently on both sides in butter for 15 minutes.
3) Place chops in a casserole and sprinkle with the lemon juice.
4) Add the parsley, cranberries, and rosemary. Adjust salt and pepper again because of the added ingredients.
5) Arrange the apple slices over the chops and pour the melted butter over them.
Cover and cook in a pre-heated (350.F) for 30-35 minutes

IF YOU'RE TOO STUBBORN TO WEAR RUBBER GLOVES WHEN YOU'RE CUTTING CHILES AND THEN JUSTIFIABLY WORRY ABOUT RUBBING YOUR EYES OR PERFORMING OTHER BODILY FUNCTIONS. And this goes double for people who wear contact lenses and have to take them out at some point. No kiddin'. It was several hours from the time I'd handled the chiles till I went to take out my contact lenses. That wasn't the problem, but putting them back in the next morning was. Ouchie ouchie ouchie. I wear gloves now.

LowCarb El Paso Chili Rellenos
- 27 oz. Whole Canned Green Chili's
- 22 oz. shredded Cheddar Cheese
- 6 lg. eggs
- 1/4 cup almond flour (ground blanched almonds)
- 1/2 tsp. salt
- pepper to taste
1) Grease or spray flat baking dish.
2) Blend eggs, almond flour, pinch of salt.
3) Pour 1/2 of mixture into bottom of dish. Place a layer of chilis on bottom of dish. Layer 3/4 of the cheese on top of the chilis. 4) Add rest of chilis and cover with the rest of the egg mixture. Sprinkle remaining cheese on top.
Bake at 375o for about 30 minutes.

LowCarb Sunday Morning Eggs Florentine
- 6 eggs
- 12 oz cottage cheese
- 8 Tbls. melted butter
- 8 oz cream cheese, softened
- 8 oz sour cream
- 2 Tbls. almond flour
- 2 cups Monterey jack cheese, shredded
- 1 cup fresh spinach, Wash the spinach well and chop coarsely.
1) Mix the first 6 ingredients well.
2) Fold the cheese and spinach into the egg mixture.
3) Pour into a greased 13X9 glass baking dish.
Bake at 350F for 30-40 minutes until a knife inserted in the middle comes out clean.
Sprinkle additional Monterey jack cheese on top just before serving.
Serve hot.
Tip: Top it with grilled veggies or just a layer of tomatoes for a welcome variation.
This recipe may be mixed a day ahead without spinach and refrigerated, add the spinach just before baking.

LowCarb Poached Eggs over Asparagus Spears with White Sauce
- 10 oz thin and tender fresh asparagus
- 1/4 cup butter
- 2 Tbs. soy flour
- 2 c half-and-half
- 8 lg. eggs, poached
- salt and pepper to taste
- grated Parmesan, Romano, or shredded mild Cheddar cheese
1) Trim asparagus and remove firm stems. Steam until softened.
Prepare white sauce.
2) In a small saucepan, melt butter. Add flour; blend well.
3) Gradually add half-and-half, stirring constantly, until thickened and bubbly.
4) Align asparagus in a lightly buttered shallow baking dish. Arrange cooked, drained eggs over the top of the asparagus then pour white sauce over eggs.
5) Sprinkle with salt, pepper and cheese.
Bake eggs at 400° for 2 to 3 minutes, until cheese is melted and lightly browned...Enjoy!. . :o)
Serves 4.

LowCarb Artichoke and Italian Cheese Dip
- 1 lb. shredded Mozzarella
- 1 c. grated Parmesan
- 1 c. (8 oz. jar) mayonnaise
- 1 c. (8 1/2 oz.) artichoke hearts, drained and chopped
- Minced onions
Mix ingredients together. Bake in casserole at 350 degrees for 20-30 minutes or in lightly buttered 3 1/2 quart slow cooker/Crock Pot on (high) for about 1 hour.
Serve with Porkrinds
