That right there is a myth. It was Johnson with almost entirely Republican support (or the other way around, actually) that passed all the civil rights legislation. Why would those opposed to that legislation switch in protest to the party that passed it?
It's a long-standing claim by the Democrats intended to white wash their racist history (and current barely closeted racism).

I think the yellow dogs were the Reagan era conservative Democrats (although the term “boll weevil” was also used); the blue dogs were the Clinton era conservative Democrats.
