I don't know why I risk it, but maybe it's because I've had too many "cardboard steak" experiences. At least when it's undercooked, it stays juicy and soft. :)

I've always loved rare steak. Somehow in old(er) age, I seem to be wanting it cooked a little more.
Ordered prime rib a week or so ago in a restaurant, it came to the table very rare and still cold. The waitress said I need to order it "medium" to get it cooked enough to become warm, so guess that's what I'll do.
