I was never a coffee snob until I visited the Copan Ruins on the Honduras Guatemala border. I visited a coffee plantation just north of there and witnessed the production of coffee beans, from growing, harvesting only the ripe red berries, drying to 15% moisture, de-hulling, hand sorting, and roasting.
The best coffee is 100% shade grown arabica roasted to 164° F. Normal dark roasted coffee is done to 171°F. It’s amazing how 7 degrees less takes it from bitter to extremely smooth. Black coffee at its finest,
