I remember Aunt Bee would walk over to the jail to bring the town drunk Otis Campbell a basked with a red checkered kitchen towel covering hot fried chicken, biscuits, mashed potatoes and apple pie.

State correctional facilities frequently have chicken on the menu, though it varies by institution. Chicken is considered a staple protein, often appearing as patties, nuggets, or baked quarters, but some facilities have reduced its frequency due to budget constraints.

Common chicken items include “Buffalo chicken,” “chicken sausage,” “pepper chicken,” and crispy chicken patties.

In some systems, chicken has been reduced from three times a week to once per week to reduce costs.
