They could do something like how they count sheep. Simply count the legs and divide by eight.
(Yes, spiders lose legs sometimes, so this wouldn’t be exact.)

That would be easy enough if the spiders would cooperate. Maybe there's a course on that at the University of Transylvania...Spider-Charming?
