Windows 7 might be a challenge unless you run it in a virtual machine. I have it running in a virtual machine on my laptop which has a Ryzen 2500u with no problems, but I have never tried getting it to dual boot in that laptop.
Windows 7 did not reach End of Life until 2020 The Ryzen 3500 and 3550 were released in January of 2019 so there are likely are drivers available, but it would take a little homework.
I found some directions from Grok. Both of the mini-PCs that I own and provided links to have third generation Ryzen APUs which apparently do have Windows 7 drivers available; it is possible that there could be other issues as well. But chances are a minicomputer with Ryzen 3500 or 3550 will run Windows 7 just fine... It would be easier to just use the Windows 11 OS that comes with them, however. But easiest id not always best. So good luck if you actually decide to take this route.

Same here. I actually did get one years ago, but the storage was so low it couldn't handle the initial Windows update and it is so slow I just couldn't use it as I had envisioned. I kept it around on a "just in case" basis but never really found a use for it.
I'd want decent graphics capability (not gaming, but able to power a 4K monitor for office-type tasks), and definitely Windows 7. That was the last OS oriented towards helping users do what they want, as opposed to the newer OS's that are designed to manipulate you.
