Practically any animal is edible.
In US people eat squirrels, woodchucks, nutria, armadillo, rattlesnake, turtle, crow, alligator, now even pythons.
Abroad they also eat donkeys, horses and camels, bats, cats and dogs.
Whales are eaten is some countries.
Insects have a history of being eaten in places.
Even rats are supposedly edible.

When I was a kid in the fifties in Northern Michigan, we went to a dinner for wildlife conservation stuff. They had bear meat, venison (of course), geese, ducks, fish, and beaver. I remember it as having the look of gizzard meat, slightly blue.

Never was hungry enough to eat a ‘coon although I’ve skinned several over the years. I heard they taste like dog.
