Official name was Utah Territory prior to statehood. The name “Deseret” was unofficial and primarily used by the LDS, frankly.

I guess Tejas to Texas doesn’t count, since it’s not much of a change, and it happened when Texas left Mexico, not when Texas became a U.S. state.
