...is "Let it Be" an Easter song?

No, it is not. Even if you take the position that the Mary spoken about in the song is the Blessed Virgin Mary (which the song writer Paul McCartney has denied--he has said it refers to his own mother, named Mary), the song doesn't have anything to do with Easter.

His mother died when he was 14.

Later he said he had a dream where his mother came as a soothing voice of simple words.

Hence the simple words of the song.
