This is unavoidable in the Philippines of course, under every circumstance. As Miller notes, the "height" of gastronomy in this case is still, by reputation, to this day, to be found in Manila's Chinatown, Binondo. To this day also that is a bit of an adventure. One has to become rather less fastidious; perhaps it takes a more adventurous (mildly) personality. I haven't been there in ten years so I cant say much more. If anyone makes it there and can report on the experience let us know.

My favorite Filipino food is Siopao. The Chowking food chain has the best I’ve found, if you visit. 50 years ago you could find it at local bakeries, but not much anymore. I try and get back most every year.

Wife is Filipino, when they have potlucks at her hospital (she’s a nurse, they’re ALL nurses) her coworkers have expectations that she’ll being the combo. (Pancit and lumpia). She always says “This isn’t good, I don’t think I’ll take it”. I encourage her to take it, and they eat it like wild animals. The containers always come home empty. (Her cooking is ALWAYS good, I don’t know what she’s talking about most of the time).

My mother in law hired 100’s of nurses from The Philippines.

So weird seeing piles of resumes all with pictures on them.

Sad about Siopao. When we were young date night in Manila was movies in Ermita (Gaiety theater, etc) and Siopao after.

I have seen lots of Chow King in SF/suburbs and LA.

They’re not all nurses, but they are all very hard working. My sister-in-law did not have the benefit of an education; she is a school custodian, and impresses her employers with her excellent work ethic, besides being a wonderful person.
