Might be a good time to buy stock in cattle and farming.
Go to a local butcher and buy 3 or 4 pounds of beef suet. Melt it down on low heat, strain and put in a large can in the fridge. You’ve got tallow. Good beef suet around here is 75 cents a pound If you strain it after using it, it will last for many months in the fridge. Great for fries, searing a steak in a cast iron skillet just takes a spoonful. Sear burgers, deep fry anything. Crispy, not greasy.
And the Mexican tallow will be 25% higher.
Just bought some and it is pricey.

I don’t know if all HEBs in Texas carry Beef Tallow....
