After quizzing my dad what kind of fruitcake he liked, I tweaked and customized another recipe for him. Light (colored) cake, toasted pecans and walnuts, golden raisins, dried apricots, dates, candied cherries, and Grand Marnier. He really liked it so I made it for his December birthday for several years.
It’s definitely a process but one that I was glad to go through for my dad. I haven’t made one in several years now.
The Collins Bakery fruitcakes are absolutely phenomenal as are the Southern States fruitcakes.
