See the Alton Brown Good Eats episode on this. He employs a large stepladder and a block and tackle as a crane to lower/raise the turkey.
Yea, I’ve seen that. It’s a bit of overkill IMO. A broomstick works just as well, just be sure to be sober AND SLOWLY lower the turkey into the oil.
