We’re in a spell of low to mid-30’s overnight. Daytime temps are going to be cooler (60’s) today & will be even more so tomorrow. The wind is blowing, leaves are flying. I am in “soup” mode .... just seems like soup weather. Since I have no garden to wrap up for the winter, I am cooking.
Yesterday, I made a minestrone & today, I have a pumpkin chili in the crockpot, should be ready for dinner. Dessert is apple cobbler, made from the apples we got from the orchard last Saturday. The house smells great with tasty food in the works. If anyone is interested in recipes, these two are ‘good’ IMO:
Thick & Hearty Minestrone Soup

Vegetarian Pumpkin Chili

(I just ignore that ‘Vegetarian’ is in the recipe title :-)
Those recipes look sooo delicious! Thanks for the tips!
We were on the road today. Got to see our son and his girlfriend for a little bit. He was working so we went to the restaurant where he works, and he made us a terrific pizza and a salad. The pizza had a pesto base, fire braised chicken, “house” cheese, tomato, feta, bacon, and parmesan. Homemade crust, mmmm good. The salad was also tasty: spring mix, fire braised chicken, bacon, feta, onion, cherry tomato, house-baked everything bread, with peppercorn Parmesan dressing. I wish we could visit for longer, but it is what it is. We should get to see them in a month or so, and then Christmas will probably be with us at our place for several days. Then I can really spoil them! :)
