Isn’t watercress regularly found in [Western hemisphere’s] Chinese foods?

I’ve asked for a Korean vegetable, bok choy, because it’s low in oxylates. A shop says it’s similar to a regular Chinese vegetable, but they’d prepare my lunch with bok choy.
