Do they not think they used some sort of pillows or mattresses on their beds?

Varied, some of surviving dining rooms had stone built-ins, a few wood ones (and beds) survived the eruption and were preserved in Herculaneum. The practice of reclining while eating was common among posh Romans, Etruscans, and Greeks, maybe others.
