I didn’t remember dried onions either since I NEVER ate onions and never saw them offered on a salad. One of my shocks when I moved to Boston was having to remember to tell them to serve salads without onions.
Neat about the pizza cook. Chicago pizza was SO different from what I can get here. I was at U of Chicago, so the places that stay in my memory are Italian Fiesta on 63rd st (Delivery only, never go) and Enrico’s on 55th st.
Interesting how memories are so tied in with food.

I was U of Chicago as well. I worked at the only "dry" Edwardo's in the chain, on 57th Street, near Powell's Books. I hated it, as I grew up on the famous New Haven apizza. I spent a lot of time making stuffed spinach pizza and stuffed pesto pizza. ugh.

That bun and those condiments are for a hamburger, not a hot dog.
Knowing it's Chicago, it appears the slaughterhouse owners a century ago wanted to replace hamburgers with mystery meat hot dogs.

I’m guessing you’re WAY after my time. I went there from 1962 to 1967 (changed from physics in my last year to art history so got in an extra year). Big thing then was The Medici for hot chocolate and black bread with orange marmelade.

About to commit heresy here. Cincinnati Style. Smothered in Skyline,Gold Star, Dixie etc. chili, mounds of cheese and onions. Add hot sauce to taste. If it’s Dixie you can add garlic.

The pan and stuffed pizzas in Chicago are generally cut into wedges. The midwestern square cut is most common with thin pizza that has a rigid, cardboard texture. On pizzas with a more delicate crust, the non edge pieces would be impossible to pick up neatly.

The Medici (across the street from Edwardo’s) was well regarded (more for thick pizza and atmosphere than hot chocolate) well into the ‘80s, but eventually closed down.

Pepe’s, Sally’s or Modern?
Sally's!! Modern for lunch or if Sally's line is too long.
My father was partial to "The Spot" which was #3 on the Wooster Street list (Modern was nearby and actually moved). Pepe's absorbed "The Spot" which is now all but forgotten. Tolli's in East Haven had a great bacon pizza, as did Angelo's in North Haven. When Angelo aged out the successor tried doing his own thing, instead of following Angelo's proven formula. He was out of business in a year.

After your time. The stuffed pizza thing hit big after your time at U of C. Big names like Giordano’s would only get established in the ‘70s. Uno was around, as was Gino’s East, but I think they were mainly pan crust at the time, and you had to go downtown for them.
