I have not tried Indian food, but for train food, it looks appetizing, I know in India one can't get beef, probably chicken or lamb, also very spicy.

Chicken and mutton are generally available in India. Some fish. The food is incredibly spicy for western tastes. You can ask for "less spice", but "no spice" is not available. I did have a meal on an Indian train some years back. Dimly recall is was reasonably good for local cuisine. Try to get second or first class accommodations for decent service.

In third class I imagined being in a troop train heading for the front in World War II.
