The smoke point of avocado oil is higher than 482°F (250°C), while olive oil can smoke and burn at 375°F (191°C).

You might want to only cook with avacado oil to avoid the smoke. We went through much more olive oil when used for cooking as it ended up in the oven exhaust.

I use spray EVOO for the pan when doing eggs and low temperature stuff. If I’m doing anything involving some temperature, out comes the avocado oil.
