Slaughterhouse? I’ve always done field dressing which might require a touch more technique and planning. None of that hoity toity slaughterhouse easy money stuff here. I’ve always had a boom truck or a front loader available to lift that thousand pound carcass up where I could work on it.

All that goes way back. As soon as I got big enough to swing an axe the folks put me in charge of the chickens. Then when I got my first rifle they graduated me to cows and pigs. Been that way ever since. Someplace along the way it got un-fashionable to save the hides so I give them away now.
