I noticed that Kim’a Chinese restaurant, located on Crenshaw about two miles to the north near Obama Blvd. is still in business, having survived Youths, Newcomers and the covid lockdowns. Here, you can still get traditional Cantonese dishes like chop suey that are vanishing from menus at Chinese restaurants.

chop suey

An American dish unknown in China.

The product of a Chinese cook improvising with what was available for Gold Rush miners.

They liked it!
