Swamp gator is indeed best for boots and belts. All the stuff served in restaurants is farm raised on whole chickens and meat scraps it doesn’t have that swamp flavor at all. I have eaten both and if you kill it yourself better hand it also to a Cajun so they can make something edible with it.
Or just about anywhere in Louisiana!

You're not going without food for 40 days....nor is anyone else doing that during Lent.

We had alligator sausage in New Orleans around 1980 at Che Paul’s famous restaurant. It was nothing to write home about.
That’s great! Most of the good restaurants I rememember are gone.
Alligator is pretty much like chicken breast. It’s a blank slate for the chef.
I had an excellent gator poor boy in NOLA.
