Oh my…so many people like fish tacos. What add-ons do you put on them; do you bread them? Bake or fry?
I read the other day in a culinary group about a seafood taco using broiled lobster, scallops and shrimp.. no other solid ingredients. In a wrap or tortilla.
Offered sauces :
Butter, lemon, tartar, cocktail sauce, Yum Yum, blue cheese, Wasabi , and OF COURSE Ranch. It seems to go on everything nowadays
Concept Sounded good except I cant imagine anything but butter and lemon. Others would just overwhelm the delicate flavor of the “fish”/ seafood
The chef was adding this to his menu and wanted our suggestions. I was one of the first to respond and shared the above paragraph and basically a couple ideas of sauce/dip the butter and lemon slices of course, a poppy seed dressing maybe modified slightly, anything leaning Asian .
I Also suggested a bed of firm green slice julienne such as Romane. The seafood atop would be like an appetizer and the salad taco eaten afterward…with that he could offer some heavier dressings. Maybe put taco in bowl n use the 12” ones
Another participant suggested having a pick three with six to chose from . Ideas on what varied but some ideas were broiled scrod, flounder and haddock . Thought this a good idea but this would entail a large amount of product to have on hand unless is was limited number (think signed and numbered prints) for Saturday dinner and Sunday lunch have 25, 50 whatever .
The original poster wanted pricing suggestions and name ideas and several of us said when final product was decided it would be easier to brainstorm. And where he was located a factor. I’d like to follow but its a large group of several thousand posters and no ping list as such.
He wasn’t a green horn restaurant owner but wanted to offer something new and original and was a fish out of water. He owned this restaurant for 15 years and business was good. Same menu all those years.
It was at this point my phone said it was time for its data signal nap and connection lost. And the next day most often phone was like a cat - very unresponsive
Good grief! All that responding to your tacos! Were they good?
I fried them up with some butter, salt and pepper. I don't like hiding the flavor. Had some large keto burrito tortillas and browned them up a little bit with avacado oil and butter. Made some avocado dip or spread made with lime red onions and pepper. Then some usual taco filling veggies, some sour cream and hot sauce. Wasn't hard to make, didn't take long. So we filled them up and rolled them like a burrito. No plate needed, just a napkin.
