According to Google (I know, great source huh?) "The spike protein is found on the surface of SARS-CoV-2, the virus that causes COVID-19."

So I don't know that it causes spike proteins, but it's found in the virus itself.

Yes - that's how it gets the name - they are the "spikes" on the outer membrane of the virus.
