The meta data will reveal it's a screenshot (not original photo), but won't determine whether the captured image was AI or real.

Agreed. Not great evidence at all. Terrible evidence in fact. But I've heard the advice "take a screenshot of those texts" in things like stalking-related matters for quite some time.

It does, at the very least, obfuscate proof as to whether AI was used in the first place.

In this instance, say the kid texts out the AI generated images. Bunch of other kids take screenshots of them. Unless you track down the originals, you can't really prove that the source image was AI generated.
