I haven’t bought sauerkraut in a couple years. I’ve never made it scratch. When I buy it. I get the bags from the deli Dept - not cans or jars. My mom would put a layer of Kraut in casserole dish under the stuffed cabbage rolls. She also made up a dish with the kraut n keilbasi. Served with mashed potatoes. Very good memories. We as a family of four always had dinner together.
