Pink Tip Greasys are Appalachian beans. You let them grow until the seeds are just about bursting the seams and the pod is turning color. Most of them have to be de-strung but it’s SO worth it. Ck them out:

My husband is going to love that! He loves potatoes and I never even considered water canning them, over boiled potatoes just aren’t appetizing.

I don’t worry too much about USDA approval, my favorite thing to use are Tattler Lids that are not approved. Those are great for prepping because you can reuse them over and over, and you can reuse the seals several times. I bought a bunch of each when we first moved here about 10 years ago, and I haven’t had to replace any rings yet.

I’m in East tennessee, right in the appalachians. I can pretty much see the Appalachian Trail from my front porch. Well it is across the valley and up a mountain but it’s over there. So I probably seen those beans.

Okay back to watching videos! I haven’t finished the potato one yet, I was just so excited I had to comment
