The secret to a properly cooked scallop is a raging hot pan and just a touch of oil. Usually doesn’t take more than about 90 seconds or so. Don’t try to pull them up to flip them. When they’re seared right they’ll release from the pan. The outside should have a crisp sear on it while the inside is darned near raw.
