It’s a cold gloomy day here. Going to be 24° tonight! Yesterday it was like summer. I don’t know why we can’t ever slowly ease into things.
I’m trying to figure out something to do with canned salmon. But not salmon patties or salmon loaf. I don’t know if there is anything else!
We went from decent days and nights to freezing too.
It is the way the whole country seems to be doing.
Have you tried searching on the web for a recipe?
Just some good ol’ salmon sandwiches? With soup or salad....or both!
This recipe is for crab, but could be adapted to salmon.
Crab Quiche
INGREDIENTS:
• 1 cup milk
• 3 tablespoons butter
• 3 tablespoons flour
Make a cream sauce by melting butter, adding flour, and stirring. Slowly add milk and cook until thickened, stirring constantly.
Combine sauce with
• 2 cups crab, finely chopped
• 1/2 teaspoon paprika
• 1/2 teaspoon onion, finely chopped
• 1/4 teaspoon dried basil
• 1/4 teaspoon salt
Beat in:
• 6 egg yolks
In separate bowl whip until stiff:
• 6 egg whites
Fold egg whites into crab mixture.
Bake in pre-baked pie shell 15 minutes at 425-degrees. Then at 350-degrees for 15 minutes.
Recipe will fill 2 9-inch pie shells and serve 12 people. May be frozen.
